WINEMAKING

The grapes are gently crushed, followed by maceration to extract polyphenolic substances and alcoholic fermentation at a controlled temperature. Then the product continues its evolution with a gentle fermentation until the sugars are exhausted.

PIEDMONT DOC BARBERA

This wine, made from members’ Barbera grapes, has a more or less intense red color, and is ideal with meat and cheese dishes.

WINEMAKING

The harvest is carried out between late September and early October. The grapes are separated from the stems and gently crushed. Alcoholic fermentation takes place in steel fermenters at a controlled temperature between 27-30°C. This stage involves pumping over the must twice a day to extract polyphenolic substances. This is followed by racking, malolactic fermentation and racking.
